Firecracker Meatball Recipe:
Preheat oven to 425
For the meatballs:
1 lb ground beef
3/4 cups breadcrumbs (I use gluten free ones and they work and taste great)
1 tablespoon ground ginger
1 tablespoon garlic
2 tablespoons parsley
2 teaspoons soy sauce
3 teaspoons red pepper flakes
Salt and pepper to taste
For the sauce:
4 tablespoons mayonnaise
4 tablespoons sour cream
4 teaspoons honey
2 teaspoons soy sauce
2 teaspoons Sriracha
For the green beans:
1 lb. Fresh green beans
Olive oil, about 2 tablespoons
Slap ya mama seasoning, measured with your heart, depending on how spicy you want them
Lightly spray a baking sheet and set aside
Combine all the ingredients for the meatballs in a large bowl and then use your hands to roll them into 1 1/2 inch balls (I got 15 out of this)
In another bowl toss your green beans with the olive oil and slap ya mama seasoning
Place the meatballs on one side of the greased baking sheet and the green beans to the other side (make sure they are not overlapping) and bake in the oven for 15 minutes (can flip everything halfway to make them crispy all around)
As the meatballs and green beans bake, mix together all the ingredients of the sauce in a large bowl (if you like it really saucy, you can always double the sauce recipe, it’s really good over the rice)
When the meatballs are done, toss them in the sauce and then serve over rice with the green beans on the side
ENJOY! 😊
