MINI OREO PUMPKIN CHEESECAKES 1 1/2 cups crushed Oreos(about 16 Oreos) 3 Tbsp melted butter 12 oz cream cheese, room temperature 1/3 sugar 1 tsp vanilla 2 tsp pumpkin pie spice 1/2 cup 100% pure pumpkin puree 2 large eggs Pumpkin spiced whip cream Caramel sauce(optional) 1. Preheat oven to 350 2. Crush Oreos and mix in melted butter 3. Add 1 Tbsp of mixture into muffin tin and press mixture down until firm 4. Bake for 5 minutes 5. Remove and allow to cool 6. Beat cream cheese and sugar until fluffy and smooth, about 1 minute 7. Beat in vanilla extract, pumpkin pie spice and pumpkin puree until smooth 8. Beat in eggs one at a time 9. Put 2 oz of mixture into muffin tins and bake for 17 minutes or until jiggly in the center 10. Chill and top with whipped cream, Oreos, and caramel sauce. Enjoy!!
