Golden, crunchy tortillas filled with juicy seasoned beef, colourful peppers and melted mozzarella, served with a creamy honey chilli lime sauce. Easy to make, packed with flavour and dangerously addictive! Ingredients For the taco beef * 1.2 kg lean ground beef * 1 large white onion, finely chopped * 200 g red and green bell peppers, chopped * 4 garlic cloves, minced * 200 g tomato paste * 2 tsp salt * 3 tsp smoked paprika * 3 tsp dried oregano * 3 tsp garlic powder * 2 tsp onion powder * 2 tsp ground cumin * 1–2 tsp chilli powder * 2 tbsp fresh coriander or parsley, chopped * 60 ml water * A little oil or cooking spray For assembling * 15 small flour tortillas * 320 g shredded mozzarella * A little oil or cooking spray for the tortillas * Lime wedges and chopped coriander for serving For the honey chilli lime sauce * 300 g Greek yogurt * 120 g light mayonnaise * 100 g chilli-lime hot sauce * 50 g honey * Juice of 1 lime * 1 tsp smoked paprika * 1 tsp onion powder * Pinch of salt * Chopped coriander or parsley Method 1. Mix all the sauce ingredients in a bowl until creamy. Taste and adjust with extra lime, honey or hot sauce. Refrigerate while preparing the tacos. 2. Preheat the oven to 210°C and line a large baking tray with parchment paper. 3. Heat a little oil in a large frying pan over medium-high heat. Add the ground beef and break it into uneven crumbles with a wooden spoon. 4. Cook until most of the beef has browned. Add the chopped onion, bell peppers and garlic. Continue cooking for about 5 minutes, until the vegetables begin to soften. 5. Stir in the tomato paste, salt, smoked paprika, oregano, garlic powder, onion powder, cumin and chilli powder. 6. Pour in the water and mix well. Cook for another 3–5 minutes, until the filling is flavourful and moist but no longer watery. Stir in the chopped coriander or parsley. 7. Arrange the tortillas across the prepared baking tray. Add shredded mozzarella to one half of each tortilla, followed by the beef filling and another light sprinkle of cheese. 8. Fold each tortilla over the filling and press it down gently. Do not overfill them, or they may open while baking. 9. Lightly spray or brush the outside of the tortillas with oil. Bake for 15–20 minutes, flipping carefully halfway through, until the tacos are golden and crisp on both sides. 10. Allow the tacos to rest for a few minutes so the cheese settles and the tortillas become even crispier. Serve hot with the creamy honey chilli lime sauce, fresh lime wedges and chopped coriander. 🌮✨ #CrispyTacos #BeefTacos #EasyDinner #MealPrepIdeas #FoodTok
