Moo Goo Gai Pan Whether you're craving loaded noodles, tender beef, or savory chicken with crunchy cashews, there's something here for every food lover! 😋 1. CHICKEN FRIED RICE Serves: 4 Ingredients: • 1 lb (450 g) boneless chicken breast or thighs, diced • 4 cups (700 g) cold cooked jasmine rice • 3 large eggs, beaten • 1 cup (150 g) frozen peas and carrots • ½ small onion, diced • 3 green onions, sliced • 3 garlic cloves, minced • 2 tbsp (30 ml) neutral oil Sauce: • 3 tbsp (45 ml) soy sauce • 1 tbsp (15 ml) oyster sauce (use halal-certified oyster sauce) • 1 tsp sesame oil • ½ tsp white pepper Method: 1. Heat 1 tbsp oil in a very hot wok. 2. Cook chicken for 4–5 minutes until lightly browned; remove. 3. Add remaining oil and scramble the eggs. 4. Add onion, garlic, peas and carrots; stir-fry 2 minutes. 5. Add cold rice and cook over high heat for 3–4 minutes. 6. Return chicken and add soy sauce, oyster sauce, sesame oil and white pepper. 7. Toss until the rice is hot with lightly toasted edges. 8. Finish with green onions. Pro Tip: Day-old chilled rice gives separate grains and prevents mushy fried rice. 2. BEEF LO MEIN Serves: 4 Ingredients: • 12 oz (340 g) lo mein noodles • 1 lb (450 g) flank steak, thinly sliced • 1 cup (100 g) shredded cabbage • 1 medium carrot, julienned • 1 green bell pepper, sliced • 3 green onions, sliced • 3 garlic cloves, minced • 1 tbsp (15 ml) neutral oil Beef Marinade: • 1 tbsp (15 ml) soy sauce • 1 tsp cornstarch • 1 tsp sesame oil Sauce: • ¼ cup (60 ml) soy sauce • 2 tbsp (30 ml) oyster sauce (use halal-certified oyster sauce) • 1 tbsp (15 ml) sesame oil • 1 tbsp (12 g) brown sugar • 1 tsp cornstarch • ¼ cup (60 ml) beef broth • ½ tsp black pepper Method: 1. Toss beef with marinade and rest 15 minutes. 2. Cook noodles just until tender; drain. 3. Whisk sauce ingredients together. 4. Sear beef in a hot wok for 2–3 minutes; remove. 5. Stir-fry cabbage, carrot, bell pepper and garlic for 2 minutes. 6. Add noodles, beef and sauce. 7. Toss over high heat for 2–3 minutes until glossy. 8. Finish with green onions. Pro Tip: Cook the beef in batches if necessary so it sears instead of steaming. 3. CASHEW CHICKEN Serves: 4 Ingredients: • 1½ lb (680 g) chicken breast or thighs, cut into chunks • ¾ cup (100 g) roasted cashews • 1 red bell pepper, chopped • 1 green bell pepper, chopped • 2 cups (180 g) broccoli florets • 3 garlic cloves, minced • 1 tbsp grated ginger • 2 tbsp (30 ml) neutral oil Sauce: • 3 tbsp (45 ml) soy sauce • 2 tbsp (30 ml) hoisin sauce • 1 tbsp (15 ml) oyster sauce (use halal-certified oyster sauce) • 1 tbsp (15 ml) rice vinegar • 1 tbsp (12 g) brown sugar • 1 tsp cornstarch • ⅓ cup (80 ml) chicken broth • 1 tsp sesame oil Method: 1. Whisk sauce ingredients together. 2. Heat oil in a wok over high heat. 3. Cook chicken for 5–6 minutes until browned; remove. 4. Stir-fry broccoli and peppers for 2–3 minutes. 5. Add garlic and ginger and cook 30 seconds. 6. Return chicken and pour in sauce. 7. Toss until thickened and evenly coated. 8. Fold in cashews immediately before serving. Pro Tip: Add cashews last so they stay crisp and buttery.
