@chashe_s_table: DAY 22/30: QUEEN CAKES Ingredients: 6 large eggs 360g self-raising flour 200g sugar 100ml room temperature fresh milk 5ml vanilla extract 250g softened unsalted butter 1 pinch salt Method: 1. Preheat oven to 180°C (350°F). 2. Grease a muffin tin or line with cupcake liners. 3. In a large bowl, whisk butter and sugar until light and fluffy. Add eggs, three at a time, beating well after each addition. 4. Mix in vanilla extract. Sift in half the flour, then mix until just combined. Pour in milk, followed by remaining flour and salt, gently folding until smooth. 5. Divide batter evenly into prepared muffin tin. Bake for 15-20 minutes, or until skewer inserted into centre comes out clean. 6. Let cakes cool in tin for 5 minutes, then transfer to wire rack to cool completely. Enjoy with tea or as a snack!
