CHEDDAR BISCUIT CHICKEN POT PIE 🤎🥧 Creamy chicken pot pie filling topped with homemade cheddar biscuits. The ultimate cozy dinner, made completely from scratch (except for the pie crust 😉). SAVE THIS FOR YOUR NEXT COMFORT FOOD NIGHT! 🤎 INGREDIENTS For the chicken pot pie filling: * 3 carrots, peeled and finely diced * 4 celery stalks, finely diced * ½ yellow onion, finely diced * 2–3 cloves garlic, minced * 1–2 tbsp olive oil * 1–2 tbsp salted butter * ¼ cup all-purpose flour * 1 cup chicken broth * 1 cup heavy whipping cream * 1 cup half-and-half * 1 tsp smoked paprika * 1 tsp garlic powder * 1 tsp onion powder * 1 tsp black pepper, or to taste * ¼ cup peas (or more if you prefer) * 3–4 cups cooked, shredded chicken * Salt, to taste, if needed * 1 refrigerated or store-bought pie crust (pillsbury) For the homemade cheddar biscuits: * 2 cups all-purpose flour * 1 tbsp baking powder * 1 tsp Tony Chachere’s Original Creole Seasoning * 6–7 thin shavings of cold salted butter, or grated cold butter * 1 cup freshly shredded medium cheddar cheese * 1 cup buttermilk, plus a little more if needed For the topping: * 2 tbsp melted butter * Dried parsley flakes, to taste INSTRUCTIONS 1. Make the filling. Preheat your oven to 400°F. Heat the olive oil and salted butter in a large skillet over medium to medium-low heat. Add the diced carrots, celery, and onion. Sauté until they begin to soften, then add the minced garlic and cook briefly until fragrant. 2. Make it creamy. Sprinkle in the flour and stir until the vegetables are coated. Cook for about 1 minute, stirring frequently. Slowly pour in the chicken broth, stirring to prevent lumps. Add the heavy cream and half-and-half, then stir until smooth. 3. Season and add the chicken. Stir in the smoked paprika, garlic powder, onion powder, and black pepper. Add the peas and let the filling gently simmer until it thickens. Fold in the shredded chicken and reduce the heat to low. Taste and add salt if needed. 4. Prepare the pie crust. Place the pie crust into your baking dish, pressing it evenly into the bottom. Prick the bottom with a fork. 5. Make the cheddar biscuit dough. In a mixing bowl, combine the flour, baking powder, and Tony Chachere’s Original Creole Seasoning. Add the cold butter shavings or grated butter and work them into the flour with a fork. Stir in the shredded cheddar cheese. Pour in the buttermilk and gently mix with a spatula just until the dough comes together. Don’t overmix! Add a small splash of buttermilk if the dough is too dry to incorporate. 6. Assemble. Pour the creamy chicken filling into the prepared pie crust. Drop spoonfuls of biscuit dough over the filling, spreading them gently to cover the top of the dish. 7. Add the finishing touch. Mix the melted butter with dried parsley flakes and brush it over the biscuit dough. 8. Bake. Bake at 400°F for approximately 20–25 minutes, or until the biscuits are golden brown and cooked through and the filling is bubbling. If the biscuit tops brown before the centers are cooked, loosely cover them with foil and continue baking as needed. Let it rest for about 10 minutes before serving so the filling can settle. The creamy filling + homemade cheddar biscuits = pure comfort food. 😭🤎 SAVE THIS RECIPE FOR A COZY DINNER NIGHT! 🥧🤎 @Kettle and Fire @Tony Chachere’s @Pillsbury @Le Creuset #ChickenPotPie #ComfortFood #DinnerIdeas #EasyDinner #CozyKitchen
