@welcometoangieskitchen: Spinach And Feta Buns / Ingredients: For the dough: - 350g all purpose flour (2 cups + 3/4 cup + 1 tablespoon) - 35g granulated sugar (3 tablespoons) - 7g instant dry yeast (1 packet) - 7g fine sea salt (1 teaspoon + 1/4 teaspoon) - 50g unsalted butter, melted and cooled (3 tablespoons + 1 teaspoon) - 1 large egg - 150g warm milk (1/2 cup + 2 tablespoons) For the Filling: - 200g fresh baby spinach (around 7 cups, before cooking) - 120g Emmentaler cheese, grated (1 cup) - 2 tablespoons of tomato sauce - 1 tablespoon of paprika paste - 1/2 teaspoon chili flakes - 1/4 teaspoon black pepper - 1/2 teaspoon fine salt - 1/4 teaspoon sweet paprika Extras: - Sesame Seeds - Nigella Seeds - An egg, for egg wash - Feta, crumbled, for topping Instructions: 1. First prepare the dough. 2. In the bowl of a stand mixer, whisk together the flour, sugar, salt and instant dry yeast. 3. Add the milk, melted butter and egg. 4. Using the dough hook attachment, knead on low speed for about 10 minutes, or until the dough forms a smooth and elastic ball. 5. Transfer the dough to a lightly oiled bowl, cover, and let it rise at room temperature for about 2 hours, or until doubled in size. 6. Once doubled in size, gently punch down the dough and divide it into 8 equal portions, approximately 80g each. Shape each portion into a smooth ball. 7. Place the dough balls onto a baking tray lined with parchment paper, leaving some space between each one. Cover and let them rise for an additional 1 hour. 8. While the buns are rising, bring a pot of lightly salted water to a boil. Add the spinach and cook for about 3 minutes. 9. Once cooked, transfer the spinach to a colander and allow it to cool slightly. Squeeze out as much excess water as possible. 10. Finely chop the spinach and transfer it to a mixing bowl. 11. Add the grated cheese, tomato sauce, paprika paste, salt, chili flakes, sweet paprika and black pepper. 12. Using your hands, mix everything together until well combined. Set aside. 13. Once the second rise is complete, preheat the oven to 180°C (350°F). 14. Brush each bun with egg wash. 15. Using the bottom of a glass or cup, gently press down into the center of each bun to create a deep well for the filling. 16. Generously sprinkle with sesame seeds over each bun. 17. Then evenly divide the spinach and cheese filling among the buns, generously filling each well. 18. Sprinkle some nigella seeds over the filling. 19. Transfer the buns to the preheated oven and bake for approximately 20 minutes, or until golden brown and cooked through. 20. Remove the buns from the oven and allow them to cool slightly. 21. Top each bun with crumbled fresh feta cheese and an extra sprinkle of chili flakes, if desired. 22. Serve warm and enjoy! #foodies #FoodTok #baker #asmr #recipes
