@dwaynedoesfood: Homemade Caesar dressing, one bowl, 10 minutes. My score: 8/10. My wife: 10/10. I'm Dwayne, a home cook, and today I'm trying homemade Caesar dressing. Part 1 of 4 in my Chicken Caesar Salad series. I minced extra garlic and saved some for the rest of the salad. It came out rich and creamy, not too garlicky or fishy. Next time: no changes. I'd make it the same way. Ingredients (makes about 1 1/3 cups, 10 min): - 2 small garlic cloves, minced - 2 tbsp fresh lemon juice (1 lemon) - 1 tsp anchovy paste - 1 tsp Dijon mustard - 1 tsp Worcestershire sauce - 1/2 cup (about 50 g) freshly grated Parmigiano-Reggiano - 1 cup (about 220 g) mayonnaise - 1/4 tsp salt - 1/4 tsp black pepper Steps: 1. Mince the garlic. Save the extra for the salad. 2. Squeeze in the lemon. 3. Add the anchovy paste, Dijon, and Worcestershire. Mix. 4. Grate in the Parmesan and stir. 5. Add the mayo, salt, and pepper. Stir until smooth. 6. Chill until the salad is ready. Keeps about a week in the fridge. Would we cook it again? Yes. Anchovy paste in Caesar dressing: yes or no? Next up: homemade croutons. My honest rating: 8/10. My wife gave it a 10/10. Full recipe and my real time: dwaynedoesfood.com Follow @dwaynedoesfood so you don't miss the full salad.
