Smoked Salmon Toast with Creamy Avocado, Jammy Eggs & Fresh Berries 🍅🫐 Crispy whole-grain toast topped with silky smoked salmon and juicy cherry tomatoes, served with creamy avocado, soft-boiled eggs, and fresh berries. This colorful, protein-packed breakfast is fresh, flavorful, and seriously irresistible! 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 - 2 thick slices whole-grain bread - 3 oz smoked salmon, thinly sliced - 2 tbsp cream cheese - 1 ripe avocado - 1 large egg - 5–6 cherry tomatoes, halved - ¼ cup fresh blueberries - ¼ cup fresh raspberries - 1 tsp fresh lemon juice - ½ tsp sesame seeds - Salt, to taste - Freshly cracked black pepper, to taste 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬 1. Prep that crispy bread: Place the two thick slices of whole-grain bread on a cutting board. Toast in a toaster or dry skillet for 2–3 minutes until golden brown, crunchy around the edges, and beautifully crispy. 2. Get that creamy spread ready: Allow the cream cheese to soften slightly at room temperature. Spread a generous, smooth layer over both toasted bread slices. 3. Prep that silky smoked salmon: Separate the thin smoked salmon slices and gently fold them into loose ribbons, keeping their beautiful orange-pink color and delicate texture. 4. Build that salmon toast: Arrange the smoked salmon generously over one cream cheese-covered toast, allowing the silky slices to overlap naturally. Sprinkle lightly with freshly cracked black pepper. 5. Prep those juicy tomatoes: Wash the cherry tomatoes thoroughly, pat dry, and slice each one in half to reveal its bright-red flesh and juicy seed centers. 6. Build that tomato toast: Arrange the cherry tomato halves in neat, overlapping rows over the second cream cheese-covered toast. Sprinkle lightly with salt and freshly cracked black pepper. 7. Get that egg boiling: Bring a small saucepan of water to a gentle boil. Carefully lower the egg into the water and cook for 7 minutes for a soft, jammy golden yolk. 8. Cool that golden beauty: Transfer the boiled egg into ice water for 2–3 minutes. Carefully peel and slice in half, revealing the tender egg whites and rich golden-orange yolk. 9. Prep that creamy avocado: Slice the ripe avocado in half, remove the pit, and carefully scoop out the flesh while keeping the halves intact. 10. Slice that avocado goodness: Place the avocado cut-side down on a cutting board and slice thinly. Gently fan the slices into a beautiful overlapping shape and drizzle with fresh lemon juice. 11. Get those fresh berries ready: Rinse the blueberries and raspberries gently under cool water. Pat dry, keeping their natural round and delicate shapes intact. 12. Build your breakfast masterpiece: Arrange the smoked salmon toast vertically along the upper-left side of a large round speckled beige ceramic plate. Place the cherry tomato toast vertically along the upper-right side. Position the sliced avocado fan along the lower-center, the two soft-boiled egg halves at the lower-left, and the fresh blueberries and raspberries in colorful clusters along the left edge. 13. Finish it fresh: Sprinkle sesame seeds over the jammy egg yolks, add freshly cracked black pepper over the smoked salmon and tomatoes, and serve immediately. Enjoy that creamy, crispy, fresh breakfast goodness! Prep Time: 10 minutes | Cooking Time: 10 minutes | Total Time: 20 minutes | Kcal: ~850 per serving | Servings: 1
