@agoodstir: WHITE CHICKEN SKILLET LASAGNA Love lasagna but not all the work? This creamy, cheesy skillet version is so easy to make, especially when you've got leftover rotisserie chicken! No layering required, and dinner is ready in about 30 minutes! INGREDIENTS • 1 tsp olive oil • 3 cloves garlic, minced • 2 cups shredded rotisserie chicken • 1½ cups chicken broth, plus extra if needed • 1 cup heavy cream • 2 tsp Italian seasoning • 6 regular lasagna noodles, broken into pieces • 1-1½ cups shredded mozzarella cheese • ¼ cup chopped fresh basil • Salt and pepper, to taste • Freshly grated Parmesan, optional INSTRUCTIONS 1. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for about 30 seconds, until fragrant. 2. Pour in chicken broth and heavy cream. Stir in Italian seasoning and bring to a gentle simmer. 3. Add broken lasagna noodles, stirring to coat. Cover and simmer for 10-15 minutes, or until the noodles are tender, stirring occasionally. Add a little extra broth if the sauce becomes too thick. 4. Stir in the cooked chicken and continue cooking for 3-5 minutes, or until heated through. Season with salt and pepper to taste. 5. Sprinkle mozzarella evenly over the top. Reduce heat to low, cover, and cook for 2-3 minutes, until the cheese is melted. 6. Remove from heat, sprinkle with fresh basil, and let rest for a few minutes before serving. Top with freshly grated Parmesan if desired. 💬 What's your favorite way to use leftover rotisserie chicken?
