There's a 1958 short story by Damon Knight called Eripmav that's about this. There's a planet where the developed species are all plant-based, and a sap-sucking vampire terrorizes a village of them. The whole point of the very short story is at the end they kill the vampire by driving a steak through its heart. It's only like 2-3 pages but that's all buildup to a pun.

I remember a book from my grade school years, 'Bunnicula' I think it was called, subtitled 'the celery stalks at midnight's. it was written like a faux horror, but veggies were being drained in the fridge crisper drawer of their juices with little bite marks. I don't really remember any more than that, but you get the gist.
