Add your flour then salt and mix really well till the dough is fully combined. Drizzle with olive oil and cover and rest 30 min. Wet your hand well and do 4-6 stretch and folds cover and rest for 1-1.5 hours Preheat your oven and a big dish to 230C for at least 30 min. Get 2 sheets of parchment paper and oil them well. Oil your surface well and turn out the dough. Oil your knife or cutter and cut into 10 pieces. Lift the pieces onto the parchment paper. I did 6 on one and 4 on another. Drizzle with oil, cover and rest 15 min. Start with the sheet you filled first. Drag the paper onto the BACK of the HOT ⚠️ dish so the it’s a flat surface. Bake for 12-14 minutes. Put the straight on a cooling rack and repeat with the other sheet. Freezing: as soon as they’re cool slice down the middle, freeze airtight and defrost airtight too.
