because dormammu is outside of time meaning he isn't affected by it and Dr strange is so Dr strange wouldn't know he's dying he comes back without remembering what happened while dormammu will constantly feel like he's fighting an endless fight but Thanos isn't outside of time so he isn't affected by the spell it would be like he's fighting Dr strange for the first time every time
