✨HOMEMADE CHICKEN NOODLE SOUP✨ Tell me why a bowl of chicken soup fixes approximately 99% of life's problems?! We’re making the ultimate comfort food with juicy shredded rotisserie chicken. INGREDIENTS • 1 small rotisserie chicken • 1.5 litres chicken stock • Reserved rotisserie chicken juices • 1 onion • 2 carrots • 2 celery sticks • 3 garlic cloves • 200g spirali pasta • 1 bay leaf • 1 tsp dried thyme • Salt & black pepper & white pepper • Lemon juice 👩🏼‍🍳 1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots and celery and cook for 5–7 minutes until softened. 2. Add the garlic and cook for another minute. 3. Pour in the chicken stock and reserved chicken juices. Add the bay leaf, thyme and black and white pepper, then bring to a gentle boil. 4. Reduce the heat and simmer for 15–20 minutes until the vegetables are tender and the broth is full of flavour. 5. Add the shredded rotisserie chicken and simmer for another 5 minutes, until piping hot. 6. Cook your pasta separately in salted boiling & drain! 7. Remove the bay leaf, taste the broth and season with salt and pepper as needed. Add a squeeze of lemon juice if you fancy! 8. And finally stir the cooked pasta into the big soup pot! ..until the next girl dinner👋🏼✨ #thegirldinnerdiaries #soup #soupseason #chickennoodlesoup #comfortfood
