Creamy Lemon Spinach & Artichoke Chicken 🍋 Tender chicken baked in a creamy, lemony sauce. Serve over angel hair pasta, rice, or mashed potatoes. INGREDIENTS • 2 lbs boneless, skinless chicken breasts • Salt and black pepper, to taste • 2 tsp garlic powder • 2 tsp onion powder • 3 garlic cloves, minced • 1 cup chicken broth • ½ cup heavy cream • ¼ cup fresh lemon juice • 4 tbsp butter, cut into pieces • 1 cup artichoke hearts, drained and chopped • 2 cups fresh baby spinach • ½ cup grated Parmesan • 1 tbsp cornstarch + 2 tbsp cold water • Optional: parsley, lemon slices, and extra Parmesan DIRECTIONS 1.	Preheat the oven to 400°F. Grease a 9×13-inch baking dish. Arrange the chicken in a single layer in the prepared dish. Season both sides with salt, pepper, garlic powder, and onion powder. 2.	In a bowl, whisk together the chicken broth, heavy cream, lemon juice, and minced garlic. Pour the mixture around the chicken, then distribute the butter pieces over the top. 3.	Cover the dish tightly with foil. Bake for 15–20 minutes for thin cutlets, 20–25 minutes for medium breasts, or 25–35 minutes for thick breasts, until the chicken is nearly cooked through. 4.	In a small bowl, stir together the cornstarch and cold water. Uncover the chicken and stir the cornstarch mixture into the sauce. 5.	Add the artichoke hearts and spinach to the sauce, tucking them around the chicken. Sprinkle the Parmesan evenly over the top. 6.	Bake uncovered for 8–10 minutes, until the sauce has thickened and the chicken reaches an internal temperature of 165°F. Let rest for 5 minutes before serving . . #onepandinners #EasyRecipe
