@phitzee: This is what I cook when I want to impress someone 😍🍽️ It’s a creamy sun dried tomato pasta and it’s one of my favourites (plus many of yours) for very good reason! - pasta of choice (I used tagliatelle) - 2 garlic cloves, minced - 1/2 red onion, chopped - 1/2 cup sun dried tomatoes - 1 tbsp tomato paste - 1/2 lemon, juiced - salt, to taste - fresh basil For the silken tofu cream: - 1 pack silken tofu (300g) - 2 tbsp nutritional yeast - 1 tsp white miso paste - 1/4 cup water Using a hand blender or high speed blender, blend together the ingredients for the silken tofu cream until completely smooth, set aside. Boil the tagliatelle in salted water for required time - saving approx 1/4 cup of pasta water. Cook the chopped red onion in an oiled pan over medium to high heat until soft. Reduce heat to low, add in the minced garlic, chopped sun dried tomatoes, salt, and cook for another minute. Pour in the silken tofu cream, tomato paste, lemon juice and chopped basil. Stir in your cooked and drained pasta combining everything together. Depending on how saucy you like your pasta, you may want to add a splash of the reserved pasta water if needed, otherwise you can discard it. Top as you wish, serve and enjoy! #creamypasta #Recipe #easymeals #pasta #cooking
