A warm, flavorful, plant-based stew combining sweet potatoes, apples, and greens, infused with anti-inflammatory spices. Perfect for meal prepping and designed for quick, budget-friendly cooking. Ingredients: - 2 large sweet potatoes, peeled and cubed - 2 apples, diced (preferably Fuji or Gala) - 1 large onion, chopped tiny and thoroughly cooked in a little water or broth until caramelized - 2 cups low-sodium vegetable broth (ensure it's gluten-free and no added salt) - 2 cups chopped leafy greens (spinach or kale) - 1 tablespoon turmeric powder (anti-inflammatory) - 1 teaspoon ground cinnamon - 1/2 teaspoon ground ginger - 1 tablespoon olive oil or avocado oil (optional, for cooking onions) - Salt substitute (such as seaweed flakes or herbs) to taste Instructions: 1. Prepare the onions by chopping finely and cooking in a small amount of water or broth over medium heat until deeply caramelized and soft, about 15 minutes. 2. Add diced sweet potatoes and cook for 5 minutes, stirring occasionally. 3. Pour in the low-sodium vegetable broth and bring to a simmer. 4. Add the diced apples, turmeric, cinnamon, and ginger. Stir well. 5. Cover and simmer on low heat for about 20 minutes, or until sweet potatoes are tender. 6. Add the chopped leafy greens and cook for another 5 minutes until wilted. 7. Adjust seasoning with salt substitute or herbs. Serve warm. #Recipe #cooking #foodtiktok #homemade #EasyRecipes #DinnerIdeas #mealprep Save this for later!
