CROCKPOT BIRRIA TACOS Tender shredded beef, a rich chile broth, and crispy tortillas filled with melted cheese. Ingredients For the beef and broth * 3 pounds beef chuck roast, cut into 3–4 large pieces * 2 teaspoons kosher salt, plus more to taste * ½ teaspoon black pepper * 1 tablespoon neutral oil * 4 dried guajillo chiles * 2 dried ancho chiles * 1 dried chipotle chile, optional for smoky heat * 1 medium white onion, roughly chopped * 5 garlic cloves * 2 Roma tomatoes, quartered * 4 cups beef broth, divided * 2 tablespoons apple cider vinegar * 2 teaspoons Mexican oregano * 2 teaspoons ground cumin * ½ teaspoon ground cinnamon * ¼ teaspoon ground cloves * 2 bay leaves For the tacos * 18–24 small corn tortillas * 3 cups shredded Oaxaca or Monterey Jack cheese * ½ cup finely diced white onion * ½ cup chopped cilantro * Lime wedges * Neutral oil, as needed for crisping Instructions 1. Prepare the chiles. Remove the stems and seeds from the dried chiles. Toast them in a dry skillet over medium heat for 15–20 seconds per side, just until fragrant; avoid burning them. Place in a bowl, cover with hot water, and soak for 15 minutes. Drain and discard the soaking water. 2. Sear the beef. Pat the chuck roast dry and season with salt and pepper. Heat 1 tablespoon oil in a skillet over medium-high heat. Sear the beef for 2–3 minutes per side, then transfer to a 6-quart slow cooker. 3. Blend the sauce. Add the softened chiles, roughly chopped onion, garlic, tomatoes, 2 cups beef broth, vinegar, oregano, cumin, cinnamon, and cloves to a blender. Blend until very smooth. For a smoother broth, pour through a fine-mesh strainer. 4. Slow-cook. Pour the sauce over the beef. Add the remaining 2 cups broth and the bay leaves. Cover and cook on low for 8–10 hours or high for 5–6 hours, until the beef shreds easily with a fork. 5. Shred and season. Transfer the beef to a bowl and shred, discarding large pieces of fat. Remove the bay leaves from the broth. Stir about ½ cup broth into the shredded beef. Taste the remaining broth and adjust the salt. Reserve it as the consommé for dipping. 6. Build the tacos. Heat a large skillet or griddle over medium heat. Skim some of the reddish fat from the surface of the consommé into a shallow dish. Lightly brush a tortilla with this fat, or quickly dip it into the surface of the broth. Place in the skillet with a little oil if needed. 7. Fill and crisp. Add cheese and shredded beef to one half of the tortilla. Fold over and cook for 2–3 minutes per side, until crisp and golden and the cheese has melted. Repeat with the remaining tortillas. 8. Serve. Top with diced onion and cilantro. Serve immediately with lime wedges and small bowls of hot consommé for dipping. #fyp #food #Foodie #cooking #foodtiktok
