I mean… when you put cabbage and salt in a jar to make sauerkraut, the gasses from fermentation need to be released or the glass will break. We call it burping when we open the lid and release the gasses

fermentation does need to be 'burped' sometimes but then sometimes it can ruin it. perhaps this year we need closed, and next we let breathe?
