@theearlyrisebaker: Every bakery I’ve ever been at shapes early and then lets the dough sit in the banneton for a long while before the cold proof. And they all mix dough, and then maybe or maybe not they do folds. #sourdoughteacher #sourdoughtips

Yes!! I think a HUGE problem with new sourdough bakers is they are always asking for a new recipe, they think that because their bread is not coming out good it’s because of the recipe. When it’s almost never the recipe. It’s that they keep messing with things. Take one recipe and do it until you know how to do it perfect. Watch your dough each time and see what works and what doesn’t.

Hi Laila! I accidentally fell asleep making an overnight loaf and didn’t do any stretch and folds. Any suggestions?

I live in South Carolina and I have struggled with recipes, I can use the sourdough calculator and make sure it's about 68% hydration and work within those numbers and that includes calculating eggs, oil, butter, honey etc as a liquid, maybe not gram for gram but if I don't it's like working with a puddle

Yes! I’ve been doing this leaving it in my banneton for about 1-2 hours then I stick it in the fridge overnight and my loaves have been coming out amazing.

Consistency is the key. Keep doing it over and over. I learned from you. I keep all the same and have learned how to change things here and there.

Slaps and folds first , no just do stretch and folds and coil folds , bf, don’t mix in a mixer , do it in a mixer . My brain is going to explode !

You’re my hero I finally have a really good loaf. I took your suggeston of not covering in the fridge. Ok I’ll leave it in the banneton in future to see if it rizes more
