@totamsachikaroberts: Part 68: “Everything Sardines” Series Follow me for more sardine recipes Sardine Egg Sandwich 🐟🥚 Ingredients * 2 jammy eggs * 1 can sardines in extra-virgin olive oil, drained * Mayonnaise or Kewpie, to taste * Dijon mustard, to taste * Chopped capers * Chopped parsley * Chopped chives * Lemon zest and a squeeze of lemon juice * Thinly sliced red onion * Chili oil, optional * Sourdough bread * Extra-virgin olive oil, for toasting * chopped red onions 1. Mash the jammy eggs and sardines together with mayonnaise or Kewpie and a little Dijon. 2. Fold in the chopped capers, parsley, chives, re d onions, lemon zest, and a squeeze of lemon juice. 3. Toast the sourdough in EVOO until golden and crisp. 4. Spoon the sardine egg mixture onto the toast. Add chili oil if you like a little heat.
