Another big batch of sourdough cinnamon rolls! This time I made 3 dozen! I divided my dough into three portions, rolled each one out, and made 2½ dozen classic cinnamon rolls and ½ dozen Biscoff cinnamon rolls. Sharing my recipe for one dozen below, along with both fillings and both cream cheese icings! sourdough cinnamon roll dough | 12 large rolls 375g warm whole milk 188g active sourdough starter 2 large eggs 75g granulated sugar 13g honey 650g bread flour 100g all-purpose flour 10g fine sea salt 90g unsalted butter, softened Mix everything except the butter. Knead until the gluten begins developing, then gradually add the softened butter. Continue kneading until smooth and elastic. Cover and let bulk ferment until puffy and well fermented. Roll the dough into approximately a 14 x 20-inch rectangle. Cut into 12 strips and roll each one individually. classic cinnamon filling | 12 rolls 226g (2 sticks) softened butter 440g (2 cups packed) brown sugar 3-4 Tbsp cinnamon Mix everything until creamy and spread evenly over your dough. biscoff filling | 6 rolls 113g (1 stick) softened butter 120g (½ cup) Biscoff cookie butter 110g (½ cup packed) brown sugar 6-8 Biscoff cookies, crushed Mix the butter, cookie butter and brown sugar until creamy. Spread over the dough, sprinkle with crushed cookies, then cut and roll. vanilla bean cream cheese icing | 12 rolls 226g (8 oz) cream cheese, softened 113g (1 stick) unsalted butter, softened 360g (3 cups) powdered sugar 2 tsp vanilla bean paste Splash of heavy cream Beat everything until light, fluffy and spreadable. biscoff cream cheese icing | 6 rolls 113g (4 oz) cream cheese, softened 57g (½ stick) unsalted butter, softened 180g (1½ cups) powdered sugar 60g (¼ cup) Biscoff cookie butter 1 tsp vanilla bean paste Splash of heavy cream if needed Beat until fluffy and finish with crushed Biscoff cookies! proofing & baking Let the shaped rolls proof until soft, airy and noticeably puffy. Pour approximately 1/4 cup warm heavy cream over each pan of 6 rolls. Bake at 350°F for 20 minutes uncovered, then loosely cover with foil and continue baking until the centers reach 190-195°F. Check the dough rather than the filling when taking the temperature. Let cool slightly, then spread with cream cheese icing! #sourdoughcinnamonrolls #biscoffcinnamonrolls #cinnamonrollrecipe #sourdoughbaking #homebakery
