🫜🥔🪆🐻 It’s tiiiiime Borscht – Slavic Beet Soup I just had a nostalgic feeling and decided to make some borscht! If you’ve never tried it, you might be like what the heeeck, BUT I promise you’re gonna love it haha. One of the reasons why our ppl don’t deal with bloating as much as ppl in the US is simply because we eat cooked foods! Warm, easy to digest, root vegetables — everything that your gut needs 😮‍💨 This recipe will take some time, but it’s worth it (I’m sharing my mom’s recipe, but there are like 300 versions of this soup). All you need (for a medium-big pot): 2 potatoes 2 carrots 1 yellow onion 1 small cabbage or ½ of a big one 1 beet 2–3 garlic cloves Bay leaves (2–3) Salt, pepper to taste Red meat (I’d buy good quality stuff here and a fattier cut for a good broth. Some people like buying meat on the bone — that’s the best option, but I used a grass-fed cut of tenderloin, I think.) How to make: Bring water to a boil. Add meat cut into cubes to already boiling water. Remove all of the foam (I don’t know what it’s called lol) from the top once the meat comes to a boil so the broth stays nice and clean. Reduce heat to low and let the meat cook for 1.5 hours (lol I know, but this will make it super tender). While the meat is cooking, cut and grate all of the veggies. Grate the carrots on a medium grater and the beet on a small one. Cut potatoes into cubes and chop the onion. Cut the cabbage into small, straw-like pieces. Once the meat is cooked, add veggies in this sequence: onion first (let simmer for 2–3 min), then carrot (same time), then potato (4–5 min), then cabbage (a few minutes). Somewhere in between add salt, pepper, and bay leaves. The last ones are beet and garlic! Once you add the beets, do not bring it to a boil — just let it simmer on low heat for about 5 minutes. Then add a few tbsp of white vinegar for more taste. Turn off the heat and let it sit for a bit. Serve with sour cream and dill! Borscht always tastes better the next day 😮‍💨 Note: do not cover the pot until the soup is cool and ready to go in the fridge. Otherwise, it will lose its bright red color! Enjoy 😁 #nutritionist #guthealth #guthealing #borscht #slavicfood
