DUMP & BAKE SMOTHERED CHICKEN DINNER 🍗🤎 The kind of dinner that tastes like you spent all day in the kitchen, but really you just threw everything in a baking dish and let the oven do the work! Tender, juicy chicken smothered in homemade gravy with hardly any effort. Serve it over mashed potatoes or rice with your favorite sides and you’ve got yourself a good home-cooked meal! RECIPE BELOW ⬇️ Ingredients: 2 lbs boneless, skinless chicken thighs Olive oil Salt & pepper Garlic powder Onion powder Paprika Cajun seasoning (optional, for a little kick) 1 sprig fresh rosemary 2 tbsp butter 2 cups chicken broth Carrots or your favorite veggies 2 tbsp cornstarch + 2 tbsp water (use 3 tbsp of each for a thicker gravy) Directions: 1. Preheat oven to 350°F. Add chicken thighs and carrots to a baking dish. Drizzle with olive oil and season generously with salt, pepper, garlic powder, onion powder, paprika, and Cajun seasoning if using. Don’t be shy with the seasonings! This is where all your flavor comes from, so eyeball it and season heavily. 2. Add rosemary, butter, and chicken broth. Cover tightly with foil and bake at 350°F for approximately 50 minutes. 3. Remove from oven and carefully pour just the broth into a separate bowl or measuring cup. 4. Mix 2 tbsp cornstarch with 2 tbsp cold water to make a slurry. If you prefer a thicker gravy, use 3 tbsp cornstarch and 3 tbsp water instead. Stir the slurry into the hot broth until well combined, then pour everything back over the chicken and veggies. 5. Return to the oven uncovered at 400°F for approximately 20 minutes, or until the gravy has thickened and the chicken is tender and fully cooked (165°F internally). Serve over creamy mashed potatoes or rice with green beans, a warm dinner roll, or whatever your heart desires! That’s the beauty of cooking. Make it how YOU like it! 🤎 Save this one for an easy, comforting weeknight dinner! #easymeal #EasyRecipe #momlife #fallvibes #smotheredchicken
