Mango Yum Cha. This amount is roughly enough for 8–12 pieces, depending on the size of the crepes and the amount of filling. 🥞 Mango and Cream Cheese Yum Cha 1. Ingredients for the Crepes Eggs — 3 pcs. Sugar — 2 tbsp. (approx. 25–30 g) Milk — 340 g Flour — 50 g Cornstarch — 25 g Butter — 20 g Vanillin — to taste 2. Ingredients for the Cream 🤍 Heavy cream (33–35% fat) — 300 g Cream cheese — 200 g Condensed milk — 100–120 g Vanilla — to taste 3. Filling 🥭 Ripe mango — 1–2 pcs., depending on size. Set aside a few nice pieces for decoration. 👩🏻‍🍳 How to Cook Step 1. Batter Mix the eggs with the sugar. Add the milk and vanilla. Sift in the flour and starch, and whisk until smooth. Add the melted butter. Strain the batter through a sieve and let it rest for 20–30 minutes. Step 2. Crepes Heat a 24–26 cm frying pan. Bake very thin crepes over medium or low heat. Flip them carefully so they don't tear. Let them cool completely. Step 3. Cream Mix the cream cheese with the condensed milk until smooth. Pour in the cold heavy cream. Whip at medium speed until you get a thick, stable cream. Place in the refrigerator for 20 minutes. Step 4. Mango Peel the mango and cut it into small cubes. Save a few nice pieces for decoration. Step 5. Assembling the Yum Cha Place a crepe on your work surface. Pipe some cream into the center. Add the mango cubes. Fold the edges of the crepe like an envelope. Flip it seam-side down. Pipe a little cream on top and garnish with a piece of mango. ❤️ A Little Secret Don't add all the condensed milk at once if you don't like your cream too sweet. Start with 100 g, taste it, and add more if needed. Store finished yum cha in the refrigerator at a temperature no higher than 4°C. And one more thing: if you use a 26 cm frying pan, the crepes will be quite large, so this half of the recipe should yield about 8–12 envelopes. 🥭🤍 #yumcha #crepes #bakery #desert
