@thehannahbriggs: I don’t know about you, but we have already gone trick-or-treating twice and it’s not even Halloween yet 🫠 Every year we take leftover Halloween candy and throw it into baked goods. I sometimes like to throw a little espresso powder into my cookies to cut the sweetness and bring out the chocolate flavor (it does not make it taste like coffee). Ingredients 1 cup butter, melted 1 cup light brown sugar, packed 3/4 cup white sugar 1 tablespoon molasses 1 tsp espresso powder 2 eggs 2 egg yolks (save the whites for an omelette) 1 tablespoon vanilla extract 1 heaping teaspoon sea salt 3 ½ cups all-purpose flour 1 ½ teaspoons baking soda Your choice of mix-ins Instructions 1. Preheat oven to 325°F. Grease a half sheet pan. 2. In a large bowl, whisk together the melted butter, brown sugar, and white sugar until well combined. 3. Add the molasses, eggs, egg yolks, vanilla, espresso powder, and sea salt. Whisk until smooth and well combined. 4. Add the flour and baking soda. Mix until just combined. Do not overmix. 5. Fold in your desired mix-ins. 6. Spread the dough evenly into the prepared half sheet pan. 7. Bake at 325°F for about 20 minutes, or until the edges are lightly browned and the center is no longer shiny. 8.
