@lydmama: Chile Rellenos No specific recipe used- just made my own sauce and the batter is based off 1 egg per pepper! Charred and peeled Poblano peppers Cut seeds out and stuff with cheese (I used queso fresco) 1 egg per pepper Salt and dash of flour Whip egg whites until peaks, add egg yolks and salt (and seasonings if you’d like). Dip the peppers in the batter and fry on both sides for about a minute or until fried, not too long! Use a spoon to scoop and cover to make sure everything gets fried Sauce: 2 Tomatoes Pc of onion Garlic cloves (measure with your heart) Jalapeño or Serrano (would have also used chile de arbol but my husband didn’t want it too spicy) Chicken and tomato bouillon 1/2c water Blend and simmer until thickened Place peppers in sauce and simmer just long enough to get the cheese melted. Serve with whatever you’d like! I made refried beans and used leftover rice. #chilerellenos #mexicanfood #Recipe #refriedbeans #fyp

Okay honestly, without using an oven or an air fryer. That is the most genius way I’ve seen to roast peppers when you have a glass top!

Similar to our house custom in Jalisco, Mexico. Although there, everything is way more manuel labor. No instant pot, microwave, mixer etc. We use vegetable oil, no longer lard for health. The spices there are better then America. I bring them back to the USA.

You’re amazing. I think the egg mixture might had stayed fluffier if you had incorporated one yolk at a time and blended after each yolk.
