@hellofalife_55: homemade crunchy granola 🤎 this is one of my favorite ways to use sourdough discard! loaded with sprouted oats, nuts, coconut, and those big crunchy clusters! and don’t worry if you don’t have sourdough discard! it’s completely optional, and your granola will still turn out delicious! recipe (makes 2 full sheet pans - for 1 pan, divide everything in half) dry ingredients 11 cups (1,000 g) sprouted rolled oats 1 cup (about 120 g) walnuts 1 cup (about 140 g) almonds 1 cup (about 140 g) cashews 1 cup (about 120 g) shelled pistachios 1 cup (about 110 g) pecans 1 cup (about 130 g) pumpkin seeds 1½ cups (about 120 g) unsweetened coconut wet ingredients ¾ cup (about 180–200 g) sourdough discard (optional) ½ cup (113 g / 1 stick) butter ¾ cup (165 g) avocado oil or any neutral oil ¾ cup (255 g) honey ¾ cup packed (150 g) brown sugar 2 tbsp vanilla 2 large egg whites, lightly whisked until foamy instructions preheat oven to 350°f and line 2 large sheet pans with parchment paper. combine the oats, nuts, pumpkin seeds, and coconut in a large bowl. in a saucepan, gently heat the butter, oil, honey, and brown sugar just until the butter melts and the sugar dissolves. don’t overheat it or the sugar will start caramelizing. remove from heat and let cool until just warm. stir in the vanilla and sourdough discard, then whisk in the lightly beaten egg whites. pour over the dry ingredients and mix really well until everything is evenly coated. divide evenly between your 2 prepared sheet pans. bake for 15 minutes, then stir. continue baking in 10-minute intervals, stirring between each, until beautifully golden and toasted. keep a close eye on it because the nuts and coconut can burn quickly! after the final stir, this is when you can mix in dried fruit if you’d like. then use the back of your spatula to press everything down really firmly. let the granola cool completely without touching it! once cooled, break it apart into those big crunchy clusters. store in an airtight container once completely cooled. we usually finish ours within about a month! a few tips the sourdough discard is optional. simply leave it out if you don’t have any! you can swap the nuts and seeds for your favorites. the secret to those big clusters is pressing everything down firmly and letting it cool completely before breaking it apart. #homemadegranola #sourdoughdiscard #granolarecipe #sourdoughgranola #sourdoughrecipes

Why did you add the discard? Does it add benefits? Or texture?
