@amostl: Million Dollar Bacon Cheeseburger Soup Ingredients: • 1 lb ground beef • 6 slices bacon, cooked and crumbled • 1 small onion, diced • 3 cloves garlic, minced • 4 cups beef broth • 3 cups diced potatoes • 2 cups shredded cheddar cheese • 1 cup heavy cream • 1/2 cup milk • 2 tbsp all-purpose flour • 1 tsp Worcestershire sauce • 1 tsp salt • 1/2 tsp black pepper Instructions: 1. Heat a large soup pot or Dutch oven over medium heat. 2. Add the ground beef and cook for 5–7 minutes, breaking it into small pieces until fully browned. 3. Drain excess grease, leaving approximately 1 tablespoon in the pot. 4. Add the diced onion and sauté for 3–4 minutes until softened. 5. Stir in the minced garlic and cook for another 30 seconds until fragrant. 6. Sprinkle the flour over the beef mixture and stir continuously for 1 minute. 7. Gradually pour in the beef broth, stirring to prevent lumps. 8. Add the diced potatoes, Worcestershire sauce, salt, and black pepper. 9. Bring the soup to a gentle boil, then reduce the heat to medium-low. 10. Cover and simmer for 15–20 minutes until the potatoes are fork-tender. 11. Stir in the heavy cream and milk until fully combined. 12. Reduce the heat to low and gradually add the shredded cheddar cheese. 13. Stir gently until the cheese melts and the broth becomes smooth and creamy. 14. Add most of the cooked, crumbled bacon, reserving some for garnish. 15. Simmer gently for another 3–5 minutes without allowing the soup to boil rapidly. 16. If the soup is too thick, add a small amount of extra broth or milk. 17. Taste and adjust the seasoning as desired. 18. Remove from the heat and let rest for 5 minutes. 19. Ladle into serving bowls and sprinkle with the remaining crispy bacon. 20. Serve warm with crusty bread, garlic toast, or toasted hamburger buns. Storage: Refrigerate leftovers in airtight containers within 2 hours and enjoy within 3–4 days. Reheat gently over low heat, stirring frequently to maintain the creamy texture.
