@onepissedoffgrandma: “The world has enough anger, judgment, and division. Choose kindness; even when bitterness feels justified. Kindness doesn’t mean silence, surrender, or tolerating mistreatment. Set boundaries, speak truth, demand accountability, and still treat others with dignity. Courage and compassion can coexist. Wake up, choose kindness, and repeat. One small act may change someone’s life. “ ❤️ — One Pissed Off Grandma 💔⚖️ #ChooseKindness #KindnessIsStrength #CourageAndCompassion #BeTheDifference #OnePissedOffGrandma

One of my favourite childhood memories... my mother, making this fried bread for us 9 kids, with the house full of the smell of mint, eggs and "capuliato", which is a blend of sun-dried tomatoes, basil and olive oil that has been put through a meat grinder and preserved. An authentic taste of traditional Sicilian "cucina povera" that will steal your heart and have you addicted. Ingredients for 5 slices: 5 slices ciabatta bread 2 medium eggs 1 tablespoon capuliato (or the equivalent in finely chopped sun-dried tomatoes) 2 sprigs mint 1 tablespoon grated parmesan This is a dish that is made using stale bread. Think of it as a savoury French toast. Crack the eggs into a dish and add finely chopped mint. Add a tablespoon of capuliato, or failing that, chop up 2-3 sun-dried tomatoes and add those. Grate with parmesan cheese, season with pepper and whisk thoroughly with a fork. You should not need to add any extra salt, as the sun-dried tomatoes and parmesan are salty enough on their own. Now dip in the bread slices and let them soak up the egg mixture. If your bread has disappointingly large air-holes in it, as mine did... fear not. We can just fill them up with agg later 😉 Add a generous amount of neutral cooking oil to your frying pan and fry the bread at a moderate heat for 2-3 minutes from each side until golden. Feel free to touch-up any gaps in the egg batter or holes in the bread as it fries. Dry on paper towels to absorb any excess fat and enjoy immediately and piping hot. #italian #easy #bread #fried #sicilian
