I went from gratitude to entitlement, and it cost me the job. That is the part of the story people skip. I had worked my way up. Best sections. Best shifts. Best sales in the building. My reviews were great. I knew the menu, the wine, the brand, all of it. And somewhere in there it stopped being about the guest and started being about me. My tips. My section. My shift. My schedule. Why are they not cutting people when I want. Why are my managers not acting the way I want. Why are my coworkers not performing the way I want. Every sentence in my head started with my. Our industry is rampant with this and we almost never name it. Restaurant training systems teach the job and forget to teach the posture that keeps it. Hospitality training without a mirror in it just makes a better entitled server. Restaurant leadership has to be able to say this to a top performer, which is the hardest conversation there is. Restaurant culture decides whether your best people stay grateful or start billing you for their talent. Your turnover is not all C players. Some of it is this. Accountability for your strongest person is the real test of the standard.
