Full Recipe↓ Day 2/50 | ANKAKE SOBORO DON 🛒 INGREDIENTS: Servings: 1 - Rice: 1 bowl - Minced pork: 100g - Eggs: 2 - Salt: A pinch [Seasoning] - Water: 90ml - White wine: 2 tbsp - Sugar: 1/2 tbsp - Soy sauce: 1 tbsp - Grated ginger: 1 tsp [Cornflour slurry] - Cornflour: 1 tsp - Water: 1 tsp [Topping] - Scallion 🧑‍🍳 METHOD: 1. In a small bowl, mix all seasoning ingredients. In a separate bowl, mix the cornflour and water to make a slurry. 2. Beat the eggs with a pinch of salt, and prepare a bowl of warm rice. 3. Heat oil in a pan over medium heat, cook the eggs until soft and silky, then slide them over the rice. 4. In the same pan, heat a little more oil and stir-fry the minced pork until cooked. 5. Pour in the seasonings and simmer for 2 minutes. Stir the slurry, pour it in, and cook until the sauce turns thick and glossy. 6. Spoon the savoury meat sauce over the eggs and rice, and garnish with chopped scallion. 💡 KEY POINTS: - In Japan, there isn’t really a 'light' vs 'dark' soy sauce concept like in Chinese cooking. If your local supermarket sells light/dark soy sauce (like ALDI does), light soy sauce is the closest match to standard Japanese soy sauce ('Koikuchi') in flavour profile. 👉 Use light soy sauce here. - We’re using white wine and sugar instead of sake and mirin here, and it replicates the authentic flavour brilliantly. Just one rule 👉 use a dry, low-acidity wine (like Pinot Grigio). A budget bottle is completely fine—just avoid anything sweet or fruity! - ALDI didn't stock Japanese short-grain rice ('sushi rice') at the time of filming in Ireland, so I used long-grain rice here—it’s the closest and easiest option to find there. The rice shown in the video is ALDI’s long-grain rice! ⛩️ TRADITIONAL OPTION: - Swap 2 tbsp white wine for 1 tbsp sake and 1 tbsp mirin, and omit sugar. - Swap cornflour for potato starch (Katakuriko). ⚠️ DISCLAIMER: Not affiliated with or endorsed by ALDI. #soborodon #JapaneseRecipes #JapaneseCooking #EasyRecipe #Aldi
