They look so good. I think I'll make some pickled carrots and green beans this week and a cauliflower. Also most "baby carrots" in the USA are big carrots cut into 2" segments and then put into polishing drums that peel the skin and make the edges round off. So your carrots are basically the same thing anyway. Just cut differently.
