At the end of the day, we are being paid for our never ending knowledge on our food and wine/beer selections and more. Everything is situational, and that’s where our expertise takes over. I’m tired of guests looking at me like I probably made $xyz on a Friday or whatever day night it is, especially when so many people assume 10-15% is the norm and I still have to tip out ~4%
