you know what i’m getting into this chilli thing i quite enjoy it now (in SMALL amounts)🤣 (for the date oat cookies): - 4 medjool dates, pitted - 2tbsp hot milk - 1/2 large banana (or 1 small) - 1 egg - 2tbsp smooth peanut butter - pinch of sea salt - 1 cup (about 80g) rolled oats - 1tsp baking powder - 30g dark chocolate (broken into small pieces) (to serve): - greek yogurt - honey (for the chilli egg salad): - 2 eggs - 1tsp chilli oil - 1tsp dijon mustard - 2 heaped tbsp full fat cottage cheese - pinch of salt and pepper (to serve): - fresh / toasted bread - chopped chives method: 1. for the cookies, squash the dates using your fingers and remove the pips. place into a wide bowl and pour over the milk. 2. use a fork to mash the dates into the milk until you form a rough paste (it doesn’t need to be smooth!). 3. add in the banana and mash into the date mixture. 4. now add in the egg, peanut butter, sea salt, oats and baking powder and mix until thoroughly combined. 5. break the chocolate into the mixture and mix through. 6. spoon the mixture into 3 round cookies on a lined baking tray. 7. bake at 180c for 15-20 minutes or until beautifully golden brown. 8. meanwhile, boil the eggs for 8 minutes and then place into either an ice bath or cold water. 9. carefully peel the shells and place the eggs into a bowl along with the chilli oil, dijon mustard, cottage cheese and seasoning. 10. use a fork to mash the eggs into the mixture until you form a salad (leave as much texture as you like!). 11. spoon generously on top of a piece of bread / toast and sprinkle over the chives. 12. remove the cookies from the oven and serve whilst warm with a generous dollop of greek yogurt and a drizzle of honey… enjoy xxx🤎 #breakfast #eggs #toast #dates #yogurt
