@littlecajunhouse: Loaded Taco Bowls with Crispy Taco Shells Ingredients * 1 medium onion, diced * 1 package sliced Godshall’s beef bacon * 1 pound ground beef * Fresh corn cut off 4 ears of corn * 1 can black beans, drained and rinsed * 1 package of your favorite taco seasoning * ½ cup water * Olive oil * Yellow rice, cooked * Shredded lettuce * Pico de gallo * Shredded cheese * Guacamole * Sour cream * 12 taco shells Instructions 1. Prepare the taco shells. Crush the taco shells onto a baking sheet and spread them out. Bake for about 8 minutes, or until nice and crispy. 2. Cook the onion and beef bacon. Add a little olive oil to a large skillet over medium heat. Add the diced onion and sauté until softened. Add the sliced beef bacon and cook until nice and crispy. 3. Brown the ground beef. Add the ground beef to the skillet and cook until no longer pink, breaking it up as it cooks. 4. Add the vegetables. Stir in the fresh corn and black beans. Cook for a few minutes until everything is heated through. 5. Season the meat. Add the taco seasoning and ½ cup of water. Stir until everything is well combined. Cover and simmer for 10–15 minutes. 6. Build your taco bowls. Start with a bed of yellow rice, then add the taco meat mixture. Top with shredded lettuce, pico de gallo, shredded cheese, guacamole, sour cream, and plenty of those crispy crushed taco shells.
