@madebymusashi: cooking to enjoy the process of cooking 😌🗣️recipe notes from musashi below, be well friends!!! Chicken Prep Loosen the bone from the chicken thighs by making shallow cuts with your knife against the meat and the bone. Lightly salt all over and air dry in the fridge on a wired rack for 3-5 days. Preheat the oven to 500F. Sear the skin over medium low heat until golden, about 5 minutes. Flip and cook the bone side for 3 minutes until slightly cooked. Remove the chicken from the pan and add the brussels, cut side down. Place the chicken back on top of the brussels, skin side up. Brush the chicken skin with tare and place in the oven for 10 minutes. Remove from the oven and set the oven to broil. Brush the chicken with tare again and finish in the oven for 1-2 minutes until the skin is slightly charred. Tare Recipe 300g mirin 252g soy sauce 63g sugar Burn off the alcohol from the mirin in a small saucepot over high heat. Combine with the soy sauce and sugar and simmer for 5 minutes to combine the flavors. Set aside. Potatoes Peel potatoes and place in cold water and enough salt to flavor the water: it shouldn’t be salty. Bring to a simmer over high heat and cook until tender. Pass through a sieve or potato ricer into a large bowl. Bring milk and butter to a simmer and pour over the potatoes. Combine with a silicone spatula, don’t over mix or else the potatoes will become gummy. The amount of milk and butter you add is up to your preference so add more if you prefer a looser mixture. Top with furikake. #sundaydinner #nycfoodie #chickenrecipe #cookingtips
