One thing that we lost is duck eggs. Imagine once, staples like char kuey tiao and such were cooked with duck eggs. Smooth and the flavour profile is deeper and can never be replicated with chicken eggs

here in new zealand we buy our eggs unrefrigerated but then most people refrigerate when they bring them home I think. loved the hawkers in Singapore but I was too hot to enjoy eating much 😭

in a similar vein, as a very eco-conscious person i think a lot about how a lot of night market stalls are only able to operate with disposable plates, plastic-covered bowls etc because it allows them to continuously serve food without running water or a dishwasher!
