The “recipe” I use says not to stir it, skim any milk solids from the surface and strain it through a cheesecloth

just as a PSA ghee is not perfectly synonymous with clarified butter! Ghee is butter that has both browned and clarified, which is what gives it that nutty flavor! Traditionally clarified butter is just heated long enough to separate it, it doesn’t get any of those brown butter flavors ghee typically has (though it also takes a lot less time to make, no stirring for an hour)

Ghee is NOT just clarified butter. it is cooked longer than normal clarified butter which caramelizes the milk solids and gives it a stronger nutty flavor.

Thats not clarified butter, clarified butter you remove the remaining fats and it stays liquid.

I never made it. But I always try to stretch everything. What would happen if I added 10% or 20% olive oil to the finish product?

Those "impurities " are milk solids and water that cause butter to have a low smoke point. Once the milk solids have been removed, ghee now has a higher smoke point allowing it to be used in more recipes where high heat is needed.

Genuine question? if I'm cooking something Middle Eastern or South Asian Food and it needed ghee, can I substitute it with Real Butter?
