🌮✨ Breakfast Taco Tacos 🍳🌶️🧀🥑 Ingredients: 🌮 6 soft corn tortillas 🥩 450 g quinoa with black beans and corn 🧄 3 garlic cloves, minced 🧅 Half an onion, diced 🌶️ 1 small chili pepper, chopped (optional) 🍅 2 tomatoes, diced 🍋 Juice of 1 lime 🌿 Dijon + honey mustard (taco seasoning) 🧀 Oaxaca string cheese 🥑 1 avocado (sliced or made into guacamole) 🥬 avocado slices + sprouts + arugula 🌿 Fresh cilantro 🍅 avocado lime crema (topping sauces of your choice) 🧂 Salt & black pepper to taste 🫒 2 tbsp olive oil 👨‍🍳 Instructions: Heat olive oil in a pan, then sauté the garlic, onion, and chili until fragrant. Cook quinoa with vegetable broth, mix in black beans, roasted corn, diced tomatoes and lime — fresh, hearty and healthy. Stir in the diced tomatoes and a squeeze of lime juice, then simmer for 9 minutes so it soaks up all that saucy, aromatic goodness. Warm the soft corn tortillas in a dry skillet on both sides until crispy edge. Now the fun part — assemble your taco: lay down a warm tortilla, pile on the spiced, sizzling filling, sprinkle with Oaxaca string so it melts from the heat, then top with avocado slices + sprouts + arugula. Finish with another squeeze of lime and a dollop of avocado lime crema if you like. Fold it up or roll it and take a big bite — tangy, spicy, fresh, and packed with layers of flavor. The earthy soft corn tortillas and all those vibrant fillings burst in your mouth, and you'll be reaching for the next one before you know it. 😋🌮✨ - @marilynwarren160
