Chicken Tikka Masala 🥘 Want this without all the prep? 👀 I’m working on VanishVeg, a range of sauces packed with veg and blended totally smooth. Just heat, add your cooked chicken and dinner’s sorted 🙌 Join the waitlist through the link in my bio 👆 Chicken (2 servings): 300g chicken breast 40g 0% fat Greek yoghurt 1 tsp oil 1/2 tsp garam masala 1/2 tsp paprika 1 tsp lemon juice A pinch of salt Hidden veg sauce: 200g passata 1/2 onion 1 carrot 1/2 red pepper 40g butternut squash 1 tsp oil 1 tsp grated garlic 1 tsp grated ginger 1 tbsp tomato paste 8g cashews 100ml water Pinch of salt 1 tsp honey 35g single cream 5g unsalted butter Sauce spices: 1/2 tsp ground coriander 1/2 tsp ground cumin 1/2 tsp Kashmiri chilli powder 1/2 tsp paprika 1/4 tsp turmeric A tiny pinch of ground cardamom 1/2 tsp fenugreek leaves 1 tsp garam masala Optional, to serve: 100g dry basmati rice, cooked according to the packet Fresh coriander ——— Method: 1. Dice the carrot, pepper, butternut squash and onion. Heat 1 teaspoon of oil in a saucepan over medium heat. Add the veg with a pinch of salt and cook for 15 minutes. 2. Add the garlic and ginger and cook for 1 minute. Stir in the tomato paste and cook for 3 minutes. Add the coriander, garam masala, cumin, Kashmiri chilli, paprika, turmeric and cardamom. Stir over low heat for 30 seconds. 3. Add the passata, cashews, water and salt. Simmer gently, covered, for 30 minutes, stirring occasionally, until the vegetables are completely tender. 4. In a bowl mix the yoghurt, oil, garam masala, paprika, lemon juice and salt. Chop the chicken into chunks, add to the bowl and make sure it’s fully coated. 5. Air-fry in a single layer at 200°C for approximately 10–12 minutes, turning halfway, until fully cooked and slightly charred. Cook the rice now too, if using. 6. Add the fenugreek leaves and honey during the sauce’s final 3 minutes of simmering. Let it cool for a few minutes before blending, then blend until totally smooth. 7. Return the sauce to low heat. Stir in the cream and butter. Add the cooked chicken and simmer gently for 2–3 minutes. Divide between your bowls and serve with the rice, garnished with fresh coriander.
