I just got back into town and realized the fridge was EMPTY and the girls needed lunches and dinners for a busy week of sports. So as soon as work was over, I ran to the store and we banged out a late-start meal prep! I’ve been seeing caramelized onion chicken pasta everywhere, and since I love anything with caramelized onions, I had to try it. Oh my goodness… even better than I expected. 10/10!! We made a HUGE batch, so cut it in half if you’re not feeding as many as we are! CARAMELIZED ONION & GARLIC CHICKEN PASTA 3 large yellow onions, sliced 2 heads garlic, halved crosswise 4 chicken breasts 4 tbsp olive oil, divided Salt and pepper 1 tsp Italian seasoning ¼ tsp red pepper flakes, optional 2 lb pasta ½ cup heavy cream ½ cup grated Parmesan, plus more to serve 1 cup reserved pasta water Fresh parsley 1. Heat oven to 400°F. Toss onions with 2 tbsp olive oil, salt and pepper in a large baking dish. Drizzle garlic with oil, wrap in foil and add to the dish. Roast 25 minutes, stirring onions halfway. 2. Season chicken with remaining oil, salt, pepper, Italian seasoning and red pepper flakes. Nestle into onions and bake 20–25 minutes, until chicken reaches 165°F. If needed, remove chicken and roast onions and garlic longer until golden and soft. 3. Cook pasta in salted water until al dente. Save 1 cup pasta water, then drain. 4. Shred chicken. Squeeze garlic into onions and mash. Stir in cream, Parmesan and ½ cup pasta water. Toss in chicken and pasta, adding more pasta water as needed. Finish with parsley and Parmesan! STEAK, SWEET POTATOES & BROCCOLI Top sirloin steaks Sweet potatoes, peeled and diced Broccoli florets Olive oil, salt and pepper Garlic powder, butter and garlic 1. Heat oven to 425°F. Toss sweet potatoes with olive oil, salt and pepper on one sheet pan. Toss broccoli with olive oil, salt, pepper and garlic powder on another. 2. Roast until browned and tender, checking the broccoli first; ours took about 10 minutes. The sweet potatoes will take longer. 3. Season steaks with salt and pepper. Sear in a hot stainless steel pan with olive oil, butter and garlic, about 2–3 minutes per side, adjusting for thickness and desired doneness. Let rest, then slice. 4. Add sweet potatoes and broccoli to containers and top each with sliced steak. SO good!
