@em.in.the.kitchen: This chicken pot pie is so easy and so good! If you make one thing this fall, let it be this! 2 cups carrots, thinly sliced 1 cup celery, thinly sliced 1 cup diced onion 1 stick butter 1/2 tsp celery seed 1/2 tsp thyme 1 tsp garlic powder 1 tsp salt & pepper 1/2 cup flour 1 cup whole milk 2 cups chicken broth 1 cup frozen peas 4 cups shredded chicken (I used rotisserie chicken) 17.5 oz puff pastry, cut into 3 inch rectangles 1 egg + splash water Melt the butter on medium high heat in a large oven safe skillet. Add onion, carrots, and celery and saute for about 5 minutes until softened. Sprinkle seasonings and flour and stir until a thick paste forms. Lower heat and slowly stir in the milk and then the chicken broth. Bring to a gentle simmer and stir continuously until thickened. Stir in the peas and chicken. Place puff pastry pieces on top, slightly overlapping one another. Beat the egg with a splash of water and brush on top of the pastry. Bake at 425F for 25 minutes. Let sit a few minutes before serving. Enjoy! #recipes #EasyRecipe #chickenpotpie #chickenpotpierecipe #easydinnerideas
