@x86ed: I wanted to talk about recipe plagiarism. Because I don’t think there’s really such a thing as stealing a recipe, but plagiarizing a recipe and taking something unique that somebody else came up with and calling it your own is not any different than looking at somebody else’s book and writing a book just like theirs and passing it off as if it was your own book. I think there are certain content creators, and certain people that have even built their entire brand off of recipe development who are frauds and use recipe plagiarism as one of their main tools. #Cheflife #RestaurantLife. #FoodService. #Leadership. #Recipe.

This is why I rarely post my recipes because they are painstakingly developed to be mine. But the flip side of this convo is that almost any recipe can be copied/tweaked to be “new”. That’s just part of the industry.

I feel this way about leche de Tigre. Base is lime juice, celery, ginger etc, that’s what a leche de Tigre requires to be identified as so. But man, how can I call it mine if said base for it already exists and has existed for decades?? Best I can do is add my own spin on it and build on the base. Ahaha thank you for this.

The way I think about it is obviously I learned or got the basis of an ingredient from somewhere, but whenever I post or share a recipe online, I do it my way. Unless I’m baking, I’m not much of an exact recipe follower and add elements to make my own, and I feel that is what makes it “mine”. I hope this makes sense, it makes sense in my head. But yeah, I would never claim I invented a certain recipe, but I definitely got inspired by another one.

dish inspiration is often recipe plagiarism in the restaurant world. one restaurants chef works hard to be original and bring fresh new dishes to their restaurant only to have other restaurants ripping that restaurant off and putting it on their menu with a cheese change or added topping.

pattens are a very capitalistic. you can't steal an idea, you can only copy it. if it were to be copyright, that would stifle innovation. better for all to share in the idea and be allowed to tweek it to our preference.

The rule is from I think Chef Paul Bocuse (I’d have to check the source) is if you change just one thing AND improves upon it, it’s yours. Key is it must be improved. My thing is when people say something is a classic recipe and it’s entirely different. Just name it something else or a “said classic recipe ” inspired dish.

old school bakers always leave out a ingredient or miss label or double the quantity in our recipe book.. recipes are earned not taken

Don’t post your secrets. If there’s something you’re doing differently, don’t let the world know what that is. If you come onto a social media platform and show everybody how to do it you gave it away.
