Hidden Veg Beef Pasta 🍝 This is one of the recipes that inspired VanishVeg 👀 if you want to be one of the first to try my new range of hidden veg sauces, join the waitlist at VanishVeg.com 🥕 Ingredients (3 servings): 375g 5% fat beef mince 210g uncooked pasta 400g passata 200g tinned tomatoes 1 red pepper 1 carrot 1/2 onion 70g sweet potato 3 garlic cloves 1 tbsp olive oil 2 tbsp tomato paste 80ml water 1 tsp dried oregano Fresh basil Black pepper Salt 1 tsp honey 1 tsp balsamic vinegar Parmesan ——— Method 1. First peel and dice the sweet potato. Then dice the onion, carrot and red pepper. 2. Get some olive oil in a saucepan over a medium heat, add the diced veg with a small pinch of the salt and cook for 10-12 minutes, stirring regularly. You want everything soft and sweet but not browned. 3. Add grated garlic and cook for 1 minute. Then add the tomato paste and cook for 2 minutes until darker and slightly caramelised. 4. Add the passata, tinned tomatoes, water, oregano, fresh basil, black pepper, remaining salt and honey. 5. Simmer gently, covered, for 20 minutes. Stirring every 3-5 mins. 6. Add the balsamic vinegar and then blend on high for 60–90 seconds until completely silky smooth. If it’s too thick add a splash of water to the blender. 7. Cook your pasta in boiling salted water for 10-12 minutes or until al dente. 8. Whilst it cooks, put the pan back over a medium-high heat and add the beef mince. Break it up and cook for around 7 minutes until it starts to brown. Then pour the sauce back into the pan and bring to a simmer. 9. Once the pasta is cooked, save some pasta water and then drain. Add the cooked pasta and a splash of pasta water mix until glossy and fully combined. Then serve with grated Parmesan on top and enjoy, lovely! #beef #pasta #weightlossfood #DinnerIdeas
