So many of you have told me how much you wish we could sit around a table together, share a beautiful meal, pour a glass of wine, and spend an afternoon getting to know each other. Well, my dear friends, I think it’s time we made that wish come true ❤️ Next September, I’m inviting you to join me in Galicia, a beautiful little corner of Northwest Spain that holds so much of what I love about life. Wonderful food, beautiful wines, long conversations, and the kind of laughter that makes you wish the evening would never end 🇪🇸 🍷 Because to me, the most beautiful part of any journey has always been the people we share it with. And I can’t think of anything more wonderful than gathering around a table in Spain with all of you. Today, I’m sharing a little taste of Galicia with these Mussels Pinxtos. Next September, I hope we’ll be sharing the real thing together. There is a place for you at my table 😘 Link to join me in Spain is in my bio ❤️ Recipe below: 1 pound fresh mussels, cleaned 4 tablespoons olive oil 4 tablespoons butter 2 shallots, finely minced 6 garlic cloves, sliced 3/4 cup Albariño Hearty Pinch saffron 1/4 cup heavy cream 2 teaspoons Dijon Lemon zest and juice 1/4 cup chopped parsley Smoked paprika Salt and white pepper Rustic bread Drizzle the sliced bread with olive oil, salt, and pepper. Bake until just crisp. Warm olive oil and butter. Cook the shallots, then add the garlic and saffron. Deglaze with Albariño. Add in the mussels and steam until they open. Remove the mussels from the shells. Reduce the broth and stir in the cream and Dijon. Finish with lemon and parsley. Spoon the saffron cream onto grilled bread, top with a mussel, and drizzle with more sauce. Enjoy! #galicia #spain #culinarytravel #mussels #pinxtos
