Finished with fragrant herbs and slow-basted in buttery goodness, this pan-seared steak is the perfect combination of simplicity, elegance, and pure comfort food. One skillet, incredible flavor, and a steak lover's dream dinner! 🤤✨ Half Recipe 1 large, thick-cut ribeye or sirloin steak (12–16 oz) 1 tbsp olive oil 1½ tsp coarse kosher salt 1 tsp freshly cracked black pepper ½ tsp garlic powder 3 tbsp unsalted butter 4–5 garlic cloves, peeled and lightly crushed 3 fresh thyme sprigs 1 fresh rosemary sprig (optional) Flaky sea salt for finishing Pat the steak completely dry with paper towels, ensuring the surface is free of excess moisture. Season both sides generously with kosher salt, freshly cracked black pepper, and garlic powder. Let the steak rest at room temperature for approximately 20–30 minutes before cooking. Heat a heavy skillet over medium-high to high heat until thoroughly hot. Add the olive oil and swirl it around the pan. Carefully place the steak into the skillet and allow it to sear undisturbed for 3–5 minutes, depending on thickness, until a deep golden-brown crust forms. Turn the steak using sturdy metal tongs and sear the opposite side until beautifully caramelized. Briefly hold the steak on its edges to brown the sides and render any excess fat. Reduce the heat to medium. Add the butter, peeled garlic cloves, fresh thyme, and optional rosemary to the skillet. Allow the butter to melt and foam gently, releasing the fragrant aromas of the garlic and herbs. Tilt the skillet slightly and use a spoon to continuously baste the steak with the melted garlic herb butter. Spoon the bubbling butter over the top repeatedly, allowing it to coat the crust and seep into the browned edges. Turn the garlic cloves occasionally so they become golden and tender without burning. Continue cooking until the steak reaches your preferred doneness. Use an instant-read thermometer inserted into the thickest part, away from any bone. For food safety, cook whole beef steaks to at least 145°F (63°C), followed by a three-minute rest. Remove the skillet from the heat and transfer the steak to a clean cutting board. Spoon a little garlic herb butter over the top and let the steak rest for 5–10 minutes, adjusting for thickness. Serve the steak whole or slice it against the grain into thick, juicy pieces. Arrange the golden garlic cloves and fresh thyme over the steak, then drizzle with the remaining pan butter. Finish with a light sprinkle of flaky sea salt and serve immediately while warm and glossy. Want the full recipe?
