Mojo Pulled Pork
Ingredients
10 lb bone-in Boston butt (pork shoulder)
1½ cups orange juice
¾ cup fresh lime juice
¾ cup olive oil
½ cup minced garlic
3 TB dried oregano
1½ TB ground cumin
1½ TB fine salt
1 TB ground black pepper
4 cups thinly sliced onions
4 bay leaves
Zest of 2 oranges
Zest of 2 limes
Instructions
1. Prepare the mojo marinade by combining the orange juice, lime juice, olive oil, garlic, oregano, cumin, salt, black pepper, onions, bay leaves, and citrus zest. Mix thoroughly.
2. Place the pork shoulder in a 2-gallon Ziploc bag and pour the mojo marinade over it. Remove as much air as possible, seal, and refrigerate overnight, ensuring the pork is fully submerged in the marinade.
3. Preheat the oven to 275°F. Transfer the pork and all the marinade, including the onions, to a deep roasting pan, positioning the pork fat side up.
4. Cover the roasting pan with parchment paper followed by a tight layer of aluminum foil. Roast for 10 hours at 275°F, or until the pork is extremely tender and the bone pulls out easily.
5. Remove the pork from the oven and allow it to rest, still covered, for 1 hour.
6. Remove the parchment and foil. Carefully pour off all the accumulated pan drippings into a separate container and allow the fat to separate from the juices.
7. Ladle a little of the separated pork fat over the top of the pork shoulder. Place the uncovered pork under the broiler for a few minutes, just until the exterior develops some golden-brown color.
8. Remove the pork from the oven, pull out the bone, and shred the meat. Serve with the reserved pan juices as desired.
