@blackskullsreaper: OLD-SCHOOL ITALIAN-AMERICAN CHICKEN MURPHY Growing up in an Italian neighborhood in Brooklyn, Chicken Murphy was on the menu in just about every old-school Italian restaurant. This is my version just beautifully cooked ingredients and big, bold Italian-American flavor. No complicated cooking, no unnecessary ingredients. Just good, honest food that brings everybody to the table. Serves: 4–6 INGREDIENTS- * 1½ lbs chicken cutlets * 2 medium Yukon Gold potatoes, cut into thick slices * 1 red bell pepper, cut into strips * 1 green bell pepper, cut into strips * 1 large yellow onion, sliced * 4 garlic cloves, minced * ¼ cup extra virgin olive oil, plus more as needed * 2–3 hot cherry peppers, sliced * 1–2 tbsp hot cherry pepper brine, to taste * ½ cup chicken stock * ½ cup dry white wine * ½ tsp crushed red pepper, optional * Salt and freshly ground black pepper, to taste * 2 tbsp fresh Italian parsley, chopped LET’S MAKE IT- 1. Roast the potatoes. Preheat your oven to 425°F. Toss the potatoes with a drizzle of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 30–35 minutes, turning halfway through, until golden brown and tender. 2. Cook the chicken. Season the chicken with salt and black pepper. Heat a little olive oil in a large skillet over medium-high heat. Sauté the chicken in batches until golden and cooked through to an internal temperature of 165°F. Remove and set aside. 3. Sauté the vegetables. In the same skillet, add a little more olive oil if needed. Add the onions and red and green bell peppers. Sauté for 6–8 minutes until softened and beginning to caramelize. Add the garlic, hot cherry peppers, and crushed red pepper, if using. Cook for another 30 seconds. 4. Build the flavor. Pour in the white wine and let it reduce for 2–3 minutes, scraping up all those delicious browned bits from the bottom of the pan. Add the chicken stock and a little hot cherry pepper brine. Simmer for 3–5 minutes. The liquid should reduce slightly, leaving just enough to coat the ingredients — not a heavy sauce. 5. Bring it all together. Cut the chicken into bite size pieces or leave whole. Return the chicken to the skillet and add the roasted potatoes. Gently toss everything together and cook for another 2–3 minutes so all those flavors come together. Taste and adjust the seasoning. 6. Finish and serve. Sprinkle with fresh Italian parsley and finish with a generous drizzle of extra virgin olive oil. Serve hot with a loaf of crusty Italian bread to enjoy every bit of those delicious pan juices. Simple food always wins. No shortcuts, just good ingredients like Grandma used to use. ❤️ #ChickenMurphy #ItalianAmericanFood #BrooklynFood #OldSchoolItalian #ItalianRecipes
