I love the sweetness of the butternut squash paired with the savoury pancetta and cheese. It’s a delicious first course that’s always a hit, and it couldn’t be simpler to prepare! For a vegetarian version, choose a vegetarian cheese and swap the pancetta for chestnut mushrooms. Finely chop the mushrooms and fry them until golden brown, then follow the recipe as usual. And whether you’re making it vegetarian or not, I also love adding legumes to this dish. Borlotti beans, butter beans or chickpeas all pair beautifully with the sweetness of the winter squash!
